1 Ingredient Lentil Wraps & Sheet Pan Flatbreads | Gluten Free & Vegan

Ever feel like wraps, but don’t have any around the house? Or maybe you’re looking for an easy, higher protein wrap or flatbread?? These are super easy, and so versatile. Add whatever herbs and spices, and turn it into wraps/flatbreads or even you new favourite pizza crust!

Makes 7 wraps using 1/3 cup scoop.


Batter Recipe:

-1 cup dried red lentils

-1 cup water for the batter, plus 1-2 cups more for soaking


Optional Add-Ins (for fun flavours!):

-sea salt

-dried or fresh herbs: oregano, sage, rosemary, parsley, chives)

-spices: onion powder, garlic powder, paprika

-mix-ins: sun dried tomatoes


Steps:

-Cover lentils with water and let soak for 2-3 hours or overnight

-Drain the lentils, and transfer to a high speed blender with 1 cup of new water

-Blend until smooth (I ran my Ninja blender jar for 55 seconds)


Wraps:

-Heat skillet or fry pan on medium heat, using oil as required - I only added oil before the first one, but add more as required for your cooking surface

-Add 1/3 cup of batter and spread the batter out with back of measuring cup or a spoon or spatula.

-Let cook a few minutes, then flip and cook another 2 minutes

-Transfer to a plate, and cover with a kitchen towel (this keeps them warm and flexible.

-Repeat until you’ve cooked all the batter. I was able to make 7 wraps with this batch size, using a 1/3 cup measuring cup.



Flatbread:

-Pour batter onto parchment lined sheet tray. I used a quarter sheet tray (A little smaller than a standard household sheet tray)

-Spread batter using a spoon or spatula

-Sprinkle with optional herbs/spices/mix-ins

-Bake at 400F for about 20minutes

-Let cool then slice up and enjoy!


OR


Pizza:

-Follow flatbread steps, then top with pizza sauce, and toppings of choice, then pop back in the oven until toppings are golden and melty.



-Leftovers store super well in the freezer. I like to put a piece of parchment between each wrap or slice of flatbread to keep them from sticking together.
