I was craving something between our Millet-Sorghum Sourdough and our Starch-Free Keto Flax Bread — and this easy one-bowl loaf was born!

It’s wholesome, hearty, and has a lovely nuttiness from the millet and flax.
No starches, gums, or fluff-pretending — just simple, nutrient-dense ingredients. Fluffier than the 3-ingredient flax bread, but still beautifully rustic and satisfying.
Free from:
🌿 Gluten
🌿 Grains (no rice, corn, or starches)
🌿 Nuts
🌿 Yeast
🌿 Dairy
🌿 Eggs
🌿 Almond & coconut
🌿 Vegan-friendly
Ingredients
Dry:
120g ground flaxseed
* 120g millet flour
* 105g sorghum flour
30g psyllium husk powder*
* 2 tsp baking powder
* 8g (1 ½ tsp) sea salt
Wet:
* 370g warm water (microwave ~2 minutes)
* 10g (2 tsp) maple syrup
Topping:
* Whole flaxseeds or sesame seeds
* Water (for brushing)
Directions
1️⃣ Preheat oven to 350°F (175°C).
2️⃣ In one bowl, whisk all dry ingredients together.
3️⃣ Add warm water and maple syrup — mix until a dough forms.
4️⃣ Knead lightly for a few minutes, then shape into a ball.
5️⃣ Place on a parchment-lined baking tray.
6️⃣ Brush or rub water on top, sprinkle with seeds.
7️⃣ Bake 50–60 minutes (mine was perfect at 55).
8️⃣ Cool completely before slicing — then enjoy!
Notes
Golden flax = lighter flavour; brown flax = deeper flavour.
No need to pre-gel psyllium husk! Just mix it with the dry ingredients to prevent lumps.
