Almond Butter Bars | Gluten-Free, Vegan, No-Bake

These no-bake chocolate almond butter bars are incredibly easy to make and seriously satisfying. Creamy, chocolatey, and perfectly sweet, they hit all the right notes for an afternoon pick-me-up — made with wholesome ingredients and naturally sweetened.
Want a higher-protein version? Simply swap out up to ½ cup of the almond flour for your favourite protein powder. That’s my usual go-to — but they’re delicious either way!
Base Layer
1 cup almond flour*
½ cup (128g) almond butter
(or substitute peanut butter or your favourite nut/seed butter)
40mL (40g) maple syrup
(use sugar-free syrup if desired)
2 tbsp coconut oil, melted
½ tsp vanilla extract
Pinch of sea salt
Chocolate Topping
½ cup df/v dark chocolate chips
(use sugar-free if desired)
1 tbsp almond butter
Instructions
Line a 4x8 loaf pan with parchment paper.
In a bowl, mix all base layer ingredients until smooth and fully combined.
Press evenly into the prepared pan.
Place in the freezer while you prepare the topping.
Melt the chocolate chips and almond butter together in 30-second microwave intervals, stirring between each, or use a double boiler.
Spread the melted chocolate evenly over the base layer.
Chill for 2 hours, until fully set.
Slice and enjoy!
Notes
Oat Option: You can substitute oat flour for the full amount of almond flour.
Protein Boost: Replace up to ½ cup of the almond flour with protein powder for a higher-protein option.
Texture Tip: You can slice them sooner, but the texture is best after chilling for the full 2 hours.
