Chocolate Speckled Protein Ice Cream (NO PUDDING MIX!) | DF Ninja Creami

Instead of adding whole chocolate chips to your ice cream recipe, try this hack!! If you melt your chocolate chips, and add them half-way through the mixing process, it will freeze into little flecks like you would get in a store bought mint chip ice cream. Perfectly spread throughout your dairy-free/vegan protein vanilla ice cream, with some snappy chocolate bits in each bite.
Enjoy!!
Ingredients
► 1 cup canned coconut milk
► 1/2 cup almond milk (or your choice plant based milk)
► 3 tbsp sweetener of choice (I’m using 1.5 tbsp maple syrup & 1.5 tbsp allulose)
► 1 scoop vegan protein powder (*see note below)
► 1 tsp vanilla
Chocolate Speckles
► 3 tbsp df/v dark chocolate of choice (I am using allulose sweetened choc)
► 1 tsp coconut oil
Instructions
Combine & mix: you could use a blender, an immersion blender, a milk frother, or even the Creami on milkshake mode to mix it all together.
Pour into Creami tub & freeze overnight
"Spin" on Lite Ice Cream Mode
Dig a hole down the middle (go all the way to the bottom if you can, for better mixing).
Melt your chocolate chips and coconut oil & pour down the hole in the middle
Re-spin, then enjoy your new df/v vanilla chip protein ice cream!!
NOTE:
*I used 1 scoop of Now Foods Unflavoured Organic Pea Protein Powder giving us +24g of protein - you can do up to 2 scoops but it will get MUCH thicker, more like mousse/pudding - still delicious, but less ice cream-like
