What’s a recipe you make so often, that you could make it in your sleep? You pretty much have it memorized! Maybe you pull the recipe just to check a few ingredients, or oven time & temperature?
For me, it’s these almond flour chocolate chip muffins. They’re requested so often, I can pretty much make them from memory. Sometimes it’s in muffin form, sometimes it’s in loaf form. Sometimes with nuts, sometimes with cocoa powder. But it’s the same trusty base recipe… (see below recipe for links to the other versions I’ve posted previously)
For my daughter, it’s pancakes. For my son, it’s pizza dough. What’s your repeat recipe?
Banana Chocolate Chip Muffins
Ingredients:
2 bananas
3 eggs
ÂĽ cup maple syrup
1 tsp vanilla
1 cup (130g) almond flour
2 tbsp coconut flour
1 tsp baking soda
½ tsp sea salt
1 cup dark chocolate chips (or a mix of choc chips & walnuts or your fav nut)
Instructions:
Preheat oven to 325F and line muffin pan with cupcake papers
Combine mashed bananas, eggs, vanilla & maple syrup in a mixing bowl
Add almond flour, coconut flour, baking soda & sea salt
Mix until just combined
Fold in chocolate chips (& optional nuts)
Scoop into prepared muffin pan
Bake 23-25 min, until golden & a toothpick comes out clean
