Easy Banana Fudge Thumbprint Cookies

Soft & chewy banana cookie, filled with an easy (but delicious!) 2-ingredient fudge. Simple & perfectly sweet.
Makes about 8-10 cookies
Cookie:
1 cup almond flour, plus more if needed
1 mashed ripe banana
1 tsp vanilla
1/8 tsp baking soda
1/8 tsp sea salt
Fudge:
2 tbsp df/v dark chocolate/chips, melted
2 tbsp almond butter
Instructions:
Combine mashed banana and almond flour until a dough forms (add a sprinkle more almond flour if your dough is extra wet/sticky)
Scoop into balls, press on lined baking sheet to form thumbprints
Bake at 350F for 17-19 minutes until edges are golden brown
Let cool
Combine melted chocolate & almond butter. Fill thumbprints with about 1/2 tbsp of fudge mixture, then chill until set
Dig in & enjoy!
