🍊🍫🍰 Chocolate Orange Almond Cake | GF DF SF-option Day 1 of #fallintoshorts

Who else loves the combo of chocolate & orange? The whole orange cake is wonderful by itself, but chocolate ganache puts it over the edge…. 🍫🍊🍰🤤

Whether we credit this recipe to Claudia Rosen (the OG that first made it with whole oranges) or to Nigella Lawson (who made it beyond famous & used whole clementine), this is a beautiful gluten-free/grain-free recipe that’s perfect for fall/winter.
I happen to have oranges so we’re going with Claudia’s version this time, but adding our own twist (as well as a pinch of salt to the batter, and swapping some white sugar for allulose), skipping the orange cooking step, and adding a chocolate ganache & some orange zest to finish it off.
Or skip the ganache, and top with some sliced almonds for a more traditional version.
🍊🍰Cake
1 medium orange or 2 clementines
3 large eggs
1/2 tsp vanilla
125g almond flour
125g granulated sweetener of choice (I used half organic cane sugar and half allulose)
1/2 tsp baking powder
Pinch sea salt
🍫Ganache
50g dark chocolate of choice
2 tbsp coconut milk
Instructions:
-Preheat oven to 375F
-Cut your orange into pieces and remove any pips, and the stem bit.
-Place in a high speed blender with eggs & vanilla and blend until peel pieces are the size of a pea or smaller
-Pour into a mixing bowl and add dry ingredients. Mix until just incorporated
-Pour into prepared 6” cake tin and bake for 35-45 minutes
-Let cool
-Combine chocolate & coconut milk in a heat proof bowl and melt in 30 second bursts until fully melted and smooth
-Let cool for a few minutes to thicken slightly, before pouring over cooled cake
-Tip with orange zest (if you have a spare orange!)
-Dig in & enjoy!!
