Crispy Cauliflower Bites

I was cravings cauliflower bites after trying a box of store bought ones recently, and really, they aren’t that hard to make at home - pretty fun actually. Plus, for the same cost, you end up with SOOO MANY more.
Here’s what you need:
-1 head cauliflower, cut into bite sized pieces (I used half a bag of cauliflower florets from Costco and cut the really big florets into smaller bite-sized pieces)
BATTER
-1 cup gluten-free flour (I used 1/3c millet, 1/3c sorghum, and 1/3c cassava but I would switch the cassava to tapioca or arrowroot next time)
-1 cup water
-1 tsp garlic powder
-1 tsp onion powder
-1 tsp paprika
-1/2 tsp sea salt
-1/4 tsp black pepper
BREADING (optional but highly recommended if you like them super crunchy)
-1 cup gf bread crumbs (I used homemade gf sourdough bread crumbs)
SAUCE 1:
-mix 1 part mayo with 1 part sriracha
SAUCE 2 (from @Fitgreenmind go follow her if you don’t already!!)
-1/3 cup ketchup
-2 tbsp maple syrup
-juice of 1/2 lime (I used apple cider vinegar for acid instead since I didn’t have fresh lemon or lime at my house)
-1 tsp each soy sauce and sriracha (I subbed coconut aminos for soy sauce)
COOK:
-Air fryer 380F for 10-12min, shake a few times throughout cooking
OR
-Bake at 180C/360F for 25mins, flip halfway
