Layered Popsicles: Rocket Pops 🚀 & Watermelon Popsicles 🍉

It's summer, so we're making some fun & refreshing popsicles you'll be happy to share with your kids. Both are fruit-based, dairy-free & have no refined sugars.

🚀 Rocket/Bomb Pops ❤️🤍💙


Here's a healthier, refined-sugar free version of the layered bomb pops from our childhood. When I was a kid, our neighbourhood had Dickie Dee ice cream carts that would bike around in the summer, ringing a bicycle bell as they went down the street, and all the kids would run outside, and beg their parents for some ice cream or popsicles.


Ha ha, now as a mom, I cringe when I hear the ice cream truck coming to our subdivision (my kids know better than to ask, lol). But it's so easy to make better, healthier (and WAY more affordable versions) at home!! And bonus, you don't need to worry about additives and artificial food colours either.


INGREDIENTS:


🤍🤍POPSICLE BASE:

1/3 can of coconut milk** (see note below if you don’t like coconut)

2 tbsp maple syrup (or honey)


❤️RED LAYER

3/4c strawberries, fresh or frozen & defrosted

1/4c raspberries, fresh or frozen & defrosted

1/3 of the coconut mixture


🤍WHITE LAYER

1/3 of the coconut mixture


💙BLUE(PURPLE) LAYER

1c blueberries, fresh or frozen & defrosted - we used wild organic ones - the tiny ones that are deeper in colour & flavour

1/3 of the coconut mixture

Optional: 1tsp blue spirulina (for a deeper purple-blue)


Steps:

Blend one can of full fat coconut milk and 2 tbsp maple syrup, then divide into 3 small bowls.


Blend red layer and fill molds 1/3 up (depends on your mold)

Freeze 20+ minutes before adding your next layer.


Add white layer

Freeze 20+ minutes before adding your next layer.


Blend blue layer and fill molds 1/3 up (depends on your mold)


Freezer 4+ hours before removing from molds. If you have trouble popping them out, you can run the mold under warm water, and try again.

NOTE: Substituting for coconut milk: if you don’t like the flavour of coconut, feel free to sub yogurt instead, but if you use an unsweetened yogurt, check the sweetness, you may want to add a little more sweetener.

🍉 3-Ingredient Layered Watermelon Popsicles


Layered watermelon ice pop recipe is a super easy, refreshing summer dessert. It would be fun for after a backyard BBQ/get together.

Ingredients:

🍉Watermelon

🥥Coconut milk

🥝Kiwi

🍯optional( you can add sugar/honey/maple syrup to any of the layers if you feel they aren’t sweet enough as is, but we kept it simple).


🍉Blend your watermelon and fill your molds about 3/4 full, add your sticks, and freeze about 2 hours (we found the watermelon took a long time to be solid enough to add the next layer, and even then we had a stick come out)

🥥 add about a 1/2 tbsp (just enough to cover the watermelon layer), then freeze for 20+minutes

🥝 blend your peeled kiwis then fill the molds to the top, and freeze 1-2hours (again, the sugars in the kiwi made it take much longer than 20min to freeze enough)
