🍓🍰🍨Day 13 of Healthy Summer Treats | Strawberry Shortcake Ice Cream Bars/Popsicles #SummerOnShorts

Creamy df/v strawberry ice cream coated in crunchy cookie/berry crumbs. 😋🍓🍰🍨 Full recipe (and link to our homemade gf/v Nilla cookie recipe) below 🫶
Strawberry Ice Cream:
► 1 can full fat coconut milk
► 2 cups strawberries, fresh or frozen* - see fun science fact below ⬇️
► 1/4 cup maple syrup/honey/sweetener of choice (taste after blending & add more if your berries aren’t super ripe)
► 1 tsp vanilla
Shortcake Crumbs:
►1 cup gluten-free vanilla cookies (golden gf oreos, gf Nilla wafers, gf shortbread, or even gf graham crackers - or make your own with our Nilla wafer recipe: https://youtu.be/J9r2c85_-4k?si=24QRvt1ilIgkoksV we used homemade Nilla wafers with coconut sugar which gave us slightly darker crumbs. For lighter crumbs use a lighter sugar/sweetener in the recipe or store bought crispy vanilla cookie of choice
►1/3 cup freeze dried strawberries (in USA - I found them at Target, in Canada you can actually find them at Dollarama now)

Instructions:
► Blend together ice cream ingredients until smooth
► Taste and add more maple syrup/sweetener if desired (and blend again for a few seconds if you add more)
► Pour into popsicle molds, add your popsicle sticks and freeze 3+ hours
► While your popsicles freeze, prepare the shortcake crumbs by pulsing your gf vanilla cookies of choice with the freeze dried strawberries until broken up into a nice crumb size (store in a super air tight container until ready to use as the freeze dried berries will pick up moisture & soften if left open)
► Remove popsicles from molds, and dip into a glass of warm water (to make the popsicle sticky) then roll in shortcake crumbs then pop back in your freezer until ready to serve.

*💡FUN FACT: Frozen strawberries actually taste sweeter due to an enzymatic reaction from freezing causing a break down of sucrose into fructose and glucose. So berries will actually tastes sweeter to us (without actually increasing sugar content).
