PB Choc Chip Overnight Oats
1/2 cup rolled oats
1/2 cup milk of choice or water
1/4 cup yogurt of choice
2.5 tbsp peanut butter powder or nut butter (I used PB&Me organic PB powder)
1 tbsp chia seeds or ground flax
1 tbsp sweetener of choice
1/2 scoop unflavoured protein powder
1 tbsp chocolate chips
(1 tsp maca powder, optional)
Chocolate Shell Topping
1 tbsp chocolate chips
1 tsp coconut oil
Crushed peanuts/nuts/seeds (I used Yupik organic dry roasted peanuts)
Instructions
Add all oat ingredients to a jar and mix well. Refrigerate until thickened (about 30 minutes) so the magic shell sits on top.
Melt chocolate chips + coconut oil in the microwave in 30-second intervals until smooth. Pour over the oats.
Add crushed peanuts, seal, and refrigerate overnight.
Grab and go the next morning—crack that shell & enjoy!
