Want breakfast that tastes like a peanut butter cup? Yes please! These PB Chocolate Chip Overnight Oats are easy, portable, and can be made lower-fat using peanut butter powder—or keep it classic with your fave nut butter.

PB Choc Chip Overnight Oats

  • 1/2 cup rolled oats

  • 1/2 cup milk of choice or water

  • 1/4 cup yogurt of choice

  • 2.5 tbsp peanut butter powder or nut butter (I used PB&Me organic PB powder)

  • 1 tbsp chia seeds or ground flax

  • 1 tbsp sweetener of choice

  • 1/2 scoop unflavoured protein powder

  • 1 tbsp chocolate chips

  • (1 tsp maca powder, optional)

Chocolate Shell Topping

  • 1 tbsp chocolate chips

  • 1 tsp coconut oil

  • Crushed peanuts/nuts/seeds (I used Yupik organic dry roasted peanuts)

Instructions

  1. Add all oat ingredients to a jar and mix well. Refrigerate until thickened (about 30 minutes) so the magic shell sits on top.

  2. Melt chocolate chips + coconut oil in the microwave in 30-second intervals until smooth. Pour over the oats.

  3. Add crushed peanuts, seal, and refrigerate overnight.

  4. Grab and go the next morning—crack that shell & enjoy!
