Twice Baked Chocolate Cake = Half Cake & Half Molten Lava

I’ve heard of double baked potatoes, and double baked cookies (aka biscotti) but have you heard of a double baked cake?!? I hadn’t until I saw these guys do it:

And it just happens to be flour-less/gluten-free! I used theirs as a starting point but downsized it to make it a 1/4 batch size as well as made it dairy-free, & sugar-free/low carb.
Ingredients for 1/4 batch & 4” pan: (you can double this for a 6” round, or 4x it for an 8” round, but it is best the day of, so I like the smaller batch size):
60g dark chocolate, use dairy-free and/or sugar-free as desired (I used df/v/sf allulose choc)
60g coconut oil
2 lg eggs, separated (I used 2 eggs)
65g sugar/sugar sub (split into 25g for whites and 40g for yolks) I used allulose
4g cocoa powder, sifted
1/4 tsp vanilla
Pinch salt
Preheat your oven to 375F and line a 4” round pan with parchment paper.
Melt your chocolate and coconut oil together in the microwave in 30 second bursts. Stir in the vanilla and set aside for 10 mins, to let cool, while you separate your eggs.
Separate your eggs and add 40g of your sugar/sugar sub, and beat/whisk until pale and thick. Gently fold through the chocolate mixture.
Beat whites and 25g of your sugar/sugar sub until soft peaks and fold into the chocolate mixture in 2 portions. Sift your cocoa powder over top, add your salt, and gently fold in.
Transfer half the batter to your pan and bake for 20-25 mins. Remove from the oven, and reduce your oven temp to 350F.
Use a spoon to press the first layer down, making it level, then add the remaining batter on top, and bake for 12-14min. You want the middle to be slightly soft, with a little jiggle.
We’re going for an “over baked” first layer, and an “underbaked” second layer.
Allow to cool before carefully removing from your pan. I only baked mine for 10 minutes the second time, and the top layer was super molten lava-y (and didn’t cut nicely but was delicious!! Hence the extra 2 minutes for your instructions) If you want slices you need to wait longer/chill it, though the texture changes after chilling and becomes more fudgey, than molten lava-y.
