🍏🍂White Chocolate Apple Cinnamon Blondies #FallIntoShorts Day 17

These fall-inspired (gluten-free, dairy-free) blondies are packed with white chocolate chips & spiced apples. They are crunchy on top, and a perfectly chewy in the middle. Just try stop at one!



Makes: 8x8 pan (I cut into 16 squares)


INGREDIENTS:


Apples:

-1 medium apple, peeled & chopped (I like Granny Smith or Honeycrisp for this)

-1 tbsp maple syrup

-1/2 tsp cinnamon

-1/8 tsp nutmeg


Blondies:

-1 cup granulated sweetener of choice*

-1/2 cup coconut oil, melted

-2 eggs, room temperature

-1 tbsp vanilla


-2 1/4c almond flour

-1/2 tsp cinnamon

-1/8 tsp nutmeg

-1/4 tsp baking soda

-1/4 tsp sea salt


Mix-Ins:

-cooked apples (above)

-1/3 cup df white chocolate chips**


Drizzle:

-2 tbsp df white chocolate chips

-1 tsp coconut oil

NOTES/VARIATIONS:

*Lower Carb: use your fav sugar substitutes & sf white chocolate such as Lily’s, however it will still have carbs from the apple

-Paleo: use coconut sugar & coconut sugar or date sweetened chocolate

**we’re using Healthy Crunch vegan white chocolate chips here, but Lily’s is also a great brand



INSTRUCTIONS:


-Combine apple ingredients in a medium pot & cook gently until softened, about 5 minutes.

-Combine sweetener of choice, coconut oil, eggs & vanilla in a medium bowl & mix until combined.

-Add almond flour, spices, baking soda & salt and mix until combined.

-Add cooked apples & white chocolate chips. Fold in.

-Transfer to parchment lined 8x8 pan

-Bake at 375F for 24-26 minutes

-Let cool for 20 minutes

-Combine 2 tbsp df white chocolate chips & 1 tsp coconut oil in a microwave safe bowl. Heat in 30 second bursts until melted, then drizzle over your blondies.

-Then slice & enjoy!
