5-Ingredient Oat Cookie Energy Balls



These energy bites are a great make-ahead snack to keep on hand. And they taste like an oatmeal cookie! Packed with whole food energy, fibre, and protein to keep you going when you need a quick energy boost (or when hungry kids come home from school!)


Ingredients:

► 1 cup gf oats (I used quick cook, but you can also use rolled)

► 1/2 cup ground flax

► 1/2 cup almond butter

► 6 tbsp maple syrup

► 1/2 cup df/v chocolate chips


Instructions:

  1. Add ingredients to a medium bowl & mix until well combined

  2. Do a squeeze test - if it sticks together well, move to step 3. If not, add another tbsp of maple syrup or a splash of water, mix & test again. If it’s too wet add a sprinkle more oats.

  3. Divide into 1 tbsp sized balls, then store in a airtight container in the fridge for easy on the go snacks all week long!
