Chocolate Mousse “Flower Pot” Cups

Here’s how I made 100 gf/v chocolate mousse “dirt” cups for an easter-themed giveaway last weekend. A rich vegan chocolate mousse layered with gluten free cookie crumbs and topped like a cute little plant pot!
I needed 3 of these (video-sized) batches to get 100 cups, but have given you a scaled down version below so you can make 6-8 of these at home (you could even half it to make just 3-4 if you want even fewer). They’d be super cute layered in a smaller glass, or in a little flower pot.
Makes ~6–8 small cups
Chocolate Mousse Base
100g dairy-free dark chocolate
1 tbsp coconut oil
1 tsp vanilla
6 tbsp coconut sugar
2 tbsp + 1 tsp tapioca starch
1/4 tsp salt
1½ cups coconut milk
3 tbsp maple syrup
1/4 tsp instant espresso powder (optional)
Instructions
Add chocolate, coconut oil, and vanilla to a bowl. Set aside.
In a saucepan, whisk sugar, tapioca, and salt.
Slowly whisk in coconut milk until smooth.
Add maple syrup + espresso powder.
Cook on medium, whisking constantly (so it doesn’t scorch on the bottom), until boiling. Mine took a really long time because of the batch size, but yours should boil in 5-7 minutes. Boil 1–2 minutes until thick.
Pour over chocolate and whisk until smooth.
Chill completely (press plastic wrap directly on surface to stop a skin from forming).
Coconut Whip
1/2 cup coconut cream (solid part only, from the top of a chilled can of coconut milk)
1 tbsp + 1 tsp tapioca starch
1 tbsp maple syrup
1/2 tsp vanilla
Instructions
Whip until fluffy, then chill until thickened (3 hours to overnight)
Make the Mousse
Fold whipped cream into chocolate base, starting with about 1/3 of the whipped cream. Fold in, then add the rest and fold in until smooth
Assembly
Layer with chocolate cookie crumbs* in small cups:

Top with a mint sprig 🌿
Chill and enjoy!

💡 Tip: Don’t skip the espresso—it makes the chocolate taste richer without tasting like coffee!
