🍨🍫🥜 Day 31 of Healthy Summer Treats | Vegan Snickers Ice Cream Bars

I know we hit our Day 30 of 30 Days of Healthy Summer Treats yesterday, but I had one more I really wanted to share (and I may have saved the BEST for LAST) so here’s a bonus recipe: a Day 31!!


We’re making healthier Snickers inspired, vegan caramel nut ice cream bars.



====INGREDIENTS===============


Peanut Butter Caramel Ice Cream:

  • 1 can full-fat coconut milk

  • 1/4 cup natural peanut butter (or another nut/seed butter)

  • (optional: add a scoop of vanilla or unflavoured protein powder - this adds more protein, but more importantly acts as a stabilizer and makes your no-churn ice cream much creamier, alternatively you can add 1/8 tsp xanthan or guar gum, or skip this completely)

  • 1/4 cup (62g) about 4-5 Medjool dates, pitted or 1/4 cup maple syrup/sweetener of choice

  • 1 tsp vanilla

  • 1/4 tsp sea salt


No Cook Peanut Butter Caramel:

  • 1/4 cup natural peanut butter (or another nut/seed butter)

  • 1/4 cup maple syrup

  • 1/4 cup (62g) about 4-5 Medjool dates, pitted

  • 1/4 cup coconut oil

  • 1 tsp vanilla

  • 1/4 tsp sea salt


Peanuts:

  • 1/2 cup crushed peanuts (or another nut/seed)


Chocolate Coating:

  • 1-1.5 cups dark chocolate/choc chips, melted

  • 1 tbsp coconut oil, melted


====INSTRUCTIONS==================


Peanut Butter Caramel Ice Cream:

  • Combine in blender and blend until smooth

  • Pour into lined loaf pan for thicker bars, or an 8x8 square pan for thinner ice cream bars

  • Freeze 3-4 hours until solid


No Cook Peanut Butter Caramel:

  • Combine in blender and blend until smooth

  • Spread across frozen ice cream

  • Top with peanuts, press then in a little so they stick in the caramel

  • Freeze until caramel has set


Chocolate Coating:

  • Combine melted chocolate and coconut oil

  • Slice ice cream bars as desired

  • Dip in chocolate coating (I like to use forks)

  • Optional: if you want the drizzle pattern on top, let the chocolate coating set on your ice cream bars, then put some of your melted chocolate in a ziplock bag, snip the corner, and drizzle over your bars

  • Freeze until set
