🤍Fluffy Homemade Marshmallows | Sugar-Free/RSF

Homemade marshmallows are so much softer & fluffier than store bought, plus they only use a few simple ingredients (AND you choose the sweetener!! See notes below for swaps). After you’ve make them once, you’ll never go back…

INGREDIENTS:
►1/2 cup cold water (it needs to be cool/cold to bloom your gelatin)
►3 tbsp gelatin
►1/2 cup water (water temp doesn’t matter here)
►1 cup granulated sweetener of choice**
►1/2 tbsp vanilla
►pinch of sea salt
►1/3 c tapioca or 1/3 powdered allullose for dusting
STEPS:
- 8x8 with parchment. Dust with powder mix
-1/2 cold cup water in stand mixer bowl, sprinkle gelatin
-in medium pot add 1/2 cup water, 1 cup allulose, bring to a boil and heat to 210F**
-start stand mixer on low with whisk, and pour hot sugar mixture down side
-beat until cool and fluffy, beat in salt & vanilla at end
-quickly spread in 8x8 and let sit 4+hrs (overnight is best)
-cut & enjoy!! (dust with more powder as you go to keep them from sticking together)
-YUMMY!
SUGAR SUBS:
►you can totally make these with your powdered sweetener of choice, but also maple syrup and/or honey (I like the flavour using a mix of both honey and syrup). For the honey or syrup version, continue cooking the water/sugar mixture until your thermometer reaches 240F then follow the rest of the instructions.
POWDER SUBS:
►I blitzed the tapioca and allulose together in a blender until fine & powdery, you can also use just tapioca or just arrowroot, or just powdered sugar/sweetener. You really just need a mild/neutral powder to coat the marshmallow to keep them from sticking together
