š„š Viral Rice Paper Croissant turned Apple Pastry Pocket | Gluten-Free Genius? š¤Ø

Could the new viral rice paper croissant recipe work as a stand-in for gluten-free phyllo dough that we canāt find anywhere in Canada. TL/DR: maybe⦠if you like mochi!
(LMK if you have some gf phyllo near you - Iāve heard thereās some available in the UK!!)
Hereās what we did, in case you want to try it to.
INGREDIENTS:
5 eggs
1/2 cup plant milk
1/4 cup maple syrup
2 tbsp coconut oil, melted
1 tsp baking powder
1 tsp vanilla
1/2 tsp cinnamon
-Whisk together ingredients above
-Pour through a sieve into a shallow dish or plate with a lip that is larger than the rice paper
FOR āCROISSANTSā
-Dip one rice paper at a time, then remove and repeat until you have 4 layers
-Cut into 3 pieces using scissors, stack pieces (2 on top of each other and the last one sideways to make the croissant wider), and roll up your croissant
-Transfer to a baking sheet lined with parchment, and sprinkle with sugar
-Bake at 350F for 30minutes, until golden brown
FOR APPLE PASTRY POCKETS
-Dip one rice paper at a time, then remove and repeat until you have 2 layers
-Add half a chopped apple, sprinkle with sugar & cinnamon
-Fold up bottom, then fold in sides, then fold over to close
-Transfer to a baking sheet lined with parchment, and sprinkle with sugar
-Bake at 350F for 30minutes, until golden brown
