Choc Brownie Mug Cake | gf/v/keto

This is my go to snack/dessert when I have a chocolate craving. It's easy to put together, quick to cook, and oh so yummy by itself or with a scoop of df ice cream or coconut whipcream. As is, this is gluten-free, grain-free, dairy-free, egg-free, vegan, sugar-free, low carb/keto, but feel free to swap the sweetener & chocolate to your liking: another sf sweetener, coconut sugar, cane sugar - anything granulated. Enjoy!!
CHOC BROWNIE CAKE:
-1 tbsp protein powder (I’ve tried this with pea protein, whey protein, or swap protein powder to coconut flour if desired but it makes the texture “sandier” - for this video, I used pea protein powder)
-2 tbsp almond flour
-2 tbsp granulated sweetener (I used 2 tbsp allulose)
-1 tbsp cocao powder
-Pinch salt
-1/2 tsp baking powder
-1 tsp avocado oil (or sub another oil)
-1/2 tsp vanilla
-2 tbsp water
EXTRAS:
-square of df sf dark choc of choice, or 1 tbsp df sf choc chips (I used allulose sweetened)
-optional toppings: df ice cream, whipped cream, etc.
Combine cake ingredients in a microwave safe bowl or mug
Press chocolate into the middle and cover with batter
Microwave 60-90sec (my microwave is not very powerful and requires 90sec)
Let cool slightly, then enjoy!!
