Chocolate Salami (No-Bake Choc. Biscuit Dessert)

Easy • Vegan • Gluten-Free
A decadent chocolate log studded with cookie pieces & nuts (and/or dried fruit), sliced to resemble salami—minus the meat! This version is fully dairy-free, vegan, low in sugar, and endlessly customizable based on your choice of chocolate, cookies, and mix-ins.

Ingredients
1/4 cup coconut oil
85 g dairy-free/vegan dark chocolate chips or chopped chocolate bar (I used vegan/df allulose sweetened dark chocolate)
2 tbsp coconut sugar/sweetener of choice (I used allulose)
1 tbsp unsweetened cocoa powder
1/2 tsp vanilla extract
45 g gluten-free cookies, crushed (I whacked mine with a rolling pin, with cookies in a ziplock)
Suggested: GF/V Nilla wafers, GF/V graham crackers, GF/V digestives, etc (I used our GF/V biscoff cookies - see below for link to recipes)
15 g pistachios
15 g hazelnuts
Instructions
Melt the chocolate base: In a heatproof bowl, combine coconut oil and dark chocolate. Melt using a microwave in short bursts or over a double boiler until smooth.
Whisk in the flavourings: Stir in coconut sugar, cocoa powder, and vanilla until fully incorporated.
Fold in the mix-ins: Add the crushed gluten-free cookies, pistachios, and hazelnuts. Mix until everything is evenly coated and distributed. Set aside and let cool until it starts to thicken (this really helps shaping the salami log)
Shape the salami: Transfer the mixture to a sheet of plastic wrap, as a rough log shape. Using the plastic wrap, roll up the mixture, then twist the ends to secure. I like to hold the ends and roll it along the counter to roll it super tight. If you have any large air bubbles you can pop them with a toothpick, then roll tighter to push the air out, then roll up in a second layer of plastic wrap.
Chill: Refrigerate for at least 1–2 hours, or until firm enough to slice cleanly. (I stood mine up so it didn’t get a flat side, and chilled mine overnight)
Slice & serve: Once chilled, unwrap and slice into “salami” discs. Enjoy straight from the fridge for the best texture.
Notes & Customizations:
Swap nuts for seeds (pumpkin, sunflower) for a nut-free option.
Add dried fruit, crushed freeze-dried berries, or cacao nibs for fun variations.
Use a sugar-free chocolate & sugar-free cookies for a low-carb/no sugar/keto version.
For a more realistic “salami” look, dust the log lightly with powdered sugar/sweetener before slicing.
