Magic Cookies đŞâ¨ gluten-free & vegan

These cookies have all the flavours of a classic Magic Seven Layer Bar, but in cookie formâand WAAAAAYYYY easier to make. They remind me of my Kind Bar Cookies (but also way easier - one bowl, no drizzling with chocolate - yet equally chewy, hearty & delicious). Give âem a try and youâll see why everyone is loving them!

Makes 15-16 cookies, if using 1/3 cup scoops
Ingredients
⢠1 cup almonds, rough chopped
⢠½ cup pecans or walnuts, rough chopped
⢠½ cup gluten-free graham crackers, rough chopped (*store bought or use my recipe below)
⢠2 cups unsweetened coconut flakes
⢠1 cup df/v dark chocolate chips***
⢠½ cup (half a 250mL can) of sweetened condensed coconut milk***
Instructions
Preheat oven to 350F, and line baking sheets with parchment
Roughly chop the nuts & graham crackers, then add them to a bowl with the remaining ingredients. Mix until well combined
Scoop onto a parchment lined baking sheet, using about â cup of âdoughâ per âcookieâ
Bake for 10â14 min, or until golden brown
Let cool for 20â30 min to firm up (so they donât fall apart)
Dig in & enjoy!

***Easily make these refined sugar-free/lower carb by using sugar-free chocolate chips and sugar-free condensed milk
***Homemade 2-Ingredient Sweetened Coconut Condensed Milk: https://youtu.be/GihmObclsUI Make your own by boiling down a canâs-worth of full fat coconut milk to 1 cup - it takes about 20-30 minutes on low simmer. Then add in 2/3 cup of sweetener of choice & cook on low just until dissolved - WARNING if you add certain sweeteners like allulose at the start, they will burn before the milk reduces enough. I have also done this with coconut sugar, cane sugar, and maple syrup (add the syrup at the start so it can boil down too - it wonât burn). For allulose, boil down the coconut milk first, then add the allulose at the end to prevent scorching
