These vegan sweet potato brownies are ultra-gooey, deeply fudgy, and topped with a rich 2-ingredient chocolate frosting. They’re completely gluten-free, dairy-free, vegan, and refined sugar-free, yet taste like the most decadent brownies ever 🍫✨
Perfect for cozy baking and using up leftover cooked sweet potatoes, these brownies are naturally sweetened with maple syrup and packed with rich chocolate flavor — you’d never guess they’re made with wholesome ingredients!
🍫 Vegan Chocolate Sweet Potato Brownies
► 1/2 cup cooked & cooled sweet potato, mashed (from 1/2 large or 1 medium sweet potato) (122g)
► 1/4 cup maple syrup
► 2 tbsp coconut oil, melted (24g)
► 1/2 tsp vanilla
► 1/4 cup almond flour
► 1/4 cup cocoa powder
► 1/2 tsp baking powder
► 1/8 tsp salt
► 1/4 cup chopped walnuts (or swap for DF/V chocolate chips)
🍫 2-Ingredient Vegan Chocolate Sweet Potato Frosting
► 1/2 cup cooked & cooled sweet potato, mashed (122g)
► 1 cup dairy-free / vegan chocolate chips, melted (160g)
🍠 Cooking Your Sweet Potato
• Prick with a fork and bake at 425°F for 75 minutes, then let cool
• OR microwave (pricked) for 5–7 minutes, until soft, then cool completely
🔥 Brownie Instructions
• Preheat oven to 350°F and line a loaf pan with parchment
• Mix sweet potato, maple syrup, coconut oil, and vanilla until smooth
• Add almond flour, cocoa powder, baking powder, salt, and walnuts or chocolate chips
• Stir until just combined
• Transfer to pan and bake for 30 minutes
• Let brownies fully cool
✨ Frosting
• Add sweet potato and melted chocolate to a food processor
• Blend until smooth and creamy
• Spread over cooled brownies (I love using the back of a spoon for swirls!)
• Chill until set, slice, and enjoy 🤎
