3 Ingredient Almond Shortbread Cookies

Super easy, lightly sweetened almond flour shortbread cookies, made with actually 3 ingredients: almond flour, maple syrup and coconut oil.
You COULD add one more ingredient, and make these jam thumbprints, OR dip or drizzle them in melted dark chocolate after baking to bring them to another level.
But they’re perfectly simple & delicious as is (and great with tea!). Enjoy!!
Ingredients:
1 cup (121g) almond flour
2 tbsp maple syrup
2 tbsp coconut oil
Instructions:
Combine, stirring well until dough forms. It can take some kneading before the moisture distributes and it sticks together.
Then assess the texture. Does it hold together when squeezed? Great! Does it feel to wet? Add a sprinkle more almond flour. Too dry? Add a splash more maple syrup. Almond flour can vary considerably in moisture content - even an open bag of almond flour can absorb moisture from the air and need slightly less liquid.
Divide into 6 cookies, roll into balls, and press down gently on a parchment lined tray
Bake 325F for 11-13 minutes
