Easy Coconut-Flax Bread | Gluten-Free · Keto · Vegan · Egg-Free

This unbelievably simple bread comes together in just 5 minutes—no yeast, no grains, no eggs! It’s packed with fibre, rich in omega-3s, and loaded with essential vitamins and minerals like thiamine, copper, iron, and potassium. With approx. 1g net carb per slice, it checks all the boxes: gluten-free, grain-free, yeast-free, starch-free, dairy-free, egg-free, vegan, paleo, and keto-friendly. 🙌


It toasts beautifully, holds together well, and tastes amazing straight from the loaf. The perfect everyday bread when you're avoiding grains or carbs!

Ingredients


Dry

  • 150g (1 cup) flaxseeds/linseeds or 150g pre-ground flax (I used pre-ground brown flaxseeds)

  • 30g (1/4 cup) coconut flour

  • 30g (3 tbsp) ground psyllium husk

  • 2 1/2 tsp baking powder

  • 1/2 tsp salt


Wet

  • 300mL (1 1/4 cups) hot water

  • 15mL (1 tbsp) apple cider vinegar

  • 15mL (1 tbsp) olive oil


Instructions

1️⃣ Preheat oven to 350°F (175°C).

2️⃣ Grind flaxseeds in a high-speed blender or spice grinder until fine (skip this step if using pre-ground). Transfer to a mixing bowl.

3️⃣ Add remaining dry ingredients and stir.

4️⃣ Combine wet ingredients, then pour into the dry mixture and stir until cool enough to knead.

5️⃣ Knead briefly, shape into a ball/loaf, and place on a parchment-lined baking sheet.

6️⃣ Brush the top with water and sprinkle with whole flaxseeds (optional but pretty ✨).

7️⃣ Bake 50–60 minutes until the loaf has doubled in size and forms a golden-brown crust.

8️⃣ Cool completely on a wire rack before slicing.

9️⃣ Slice into 10 pieces (½-inch each) — or thinner if preferred.
