🍫🤎 Day 17 of Health(-ier) Summer Treats | No-Bake Brownie Batter Bark


These no bake-brownie batter bars are SOOOOO chocolatey & delicious, but so simple to make!! Honestly you don’t even have to spread them out and make bars. You can scoop it into a bowl and eat it with a spoon with a sprinkle of choc chips or walnuts on top. Or go nuts and press it out into a pizza crust shape and use it to make a no-bake dessert pizza (that video is coming soon!).


Here’s how to make the brownie batter bark in the video:


Brownie:

► 2/3 cup almond flour

► 6 tbsp cocoa powder

► 1/2 cup cashew/almond butter (or other nut/seed butter)

► 1/4 cup maple syrup* (note on subs below)

► 3 tbsp coconut oil

► 1 tsp vanilla extract

► pinch of sea salt

► 1/4 cup chopped walnuts, chocolate chips, or a mix of both


Choc:

► 1/2 cup (80g) chopped chocolate/chocolate chips

► 1/2 tsp coconut oil


Instructions:

► Simply combine all the ingredients in a bowl and mix until combined

► Spread out onto parchment paper - I used a spoon but you can also press it between parchment

► Top with melted chocolate, and sprinkle with more walnuts, or a sprinkle of flakey sea salt

► Pop in the freezer until set, then cut up & enjoy!!




*NOTE: I have made this recipe several different ways and it is very forgiving. You can swap out the maple syrup for another liquid sweetener like honey or vegan honey, or liquid allulose, or even swap for a non-liquid sweetener. However, if you use a granulated sweetener you may end up with a gritty texture. To avoid this you could blender your sweetener before adding it to the recipe, or try get a “powdered-sugar-form”. After adding everything, add 1-2 tbsp of water as needed to make up for the reduced moisture (but this will vary on a case-by-case basis, also factoring in how runny your nut butter is - my cashew butter is very thick and would need more, but my almond butter is very thin and needs less/none).
