Viral Olympic Double Chocolate Muffins | Worth the Hype?



Have you seen these viral Olympic muffins? Swimmer Henrik Christiansen, from Norway, has gone viral on TikTok for his love of the Olympic Village “Choccy Muffin” (essentially a double chocolate muffin stuffed with ganache) We had to make some & see if they’re worth all the hype. And you can too! But ONLY if you’re a HUGE chocolate lover - these have a LOT of chocolate.


Muffin Batter:

3/4c milk/plant mylk

1/4c water

2tsp instant coffee/espresso powder

1/2c cocoa powder

3/4c semi-sweet choc chunks, plus more for topping

1/2c butter/coconut oil/vegan butter

1/2c brown sugar/coconut sugar/sugar substitute

1/2cup cane sugar/sugar substitute

1/4 cup avocado oil

2 eggs, room temp

2tsp vanilla

2c flour/gf flour

1tbsp baking powder

1/4tsp salt


Ganache (after baking)

1/2c heavy cream/coconut milk

1/2c semi-sweet choc chunks

Pinch salt


Directions:

1. You have two ways to do this first step: Whisk together your milk, water, instant coffee, cocoa, butter and 1/2c of choc chunks in a SAUCE POT and gently melt over medium-low heat. OR combine in a microwaveable bowl and microwave in 30sec bursts until fully melted. Then set aside to let cool slightly so we don’t cook our eggs when we add them later.

2. In a medium mixing bowl whisk together your flour, baking powder and salt.

3. To the melted & cooled choc mixture, add your eggs, sugars, oil, vanilla and whisk together.

4. Fold in about 1/3 of your dry mixture at a time, making sure not to over-mix (just like pancake mix you want to leave some lumps for a good muffin batter). Add the last 1/4c of choc chips here too.

5. Scoop into 12 muffins cups - it fills them VERY full.

6. Top with more choc chips

7. Bake 375F for 20 minutes, then lower the oven temp to 350F and bake for 8-12 more minutes. Do a toothpick test to check for doneness. (This high temp at the start helps give the batter more lift, and give you taller bakery-style muffins).

8. To make your ganache, you can combine the ingredients in a sauce pan, like above, or microwave in 30sec intervals until smooth, then use a paring knife or apple corer make hole in the top of the muffin, and fill it with ganache.

9. Enjoy warm!
