Chickpea Blondies from the Today Show š«š

Iāve been wanting to try these blondies since I first saw Samah Dadaās recipe - she even got to share her recipe on the Today Show! And says itās her most popular dessert recipe, and itās made with CHICKPEAS.
Chickpea blondies were really having their moment a year or so ago (remember the Alix Earle viral chickpea blondies?) and I finally made some today, in between batches of naan, and date squaresā¦
Theyāre gluten-free, grain-free, dairy-free, egg-free, refined-sugar-free, and even oil-free. Just throw it all in a food processor, spread in a pan, bake, and dig in!! So easy.
I half-ed her batch size, and used half a can of chickpeas (my daughter happily turned the rest into roasted āpopcornā chickpeas).
Ingredients:
* 1/2 can chickpeas, drained & rinsed (178g)
* 2 tbsp + 2 tsp creamy almond butter, room temperature (40g)
* 2 tbsp maple syrup (30g)
* 1/4 cup coconut sugar
* 1 tsp vanilla
* 2 1/2 tbsp almond flour
* 1/8 tsp baking powder
* 1/8 tsp baking soda
* 1/8 tsp salt
* 1/4 cup chocolate chips of choice, plus a few extra for topping
* I added flakey sea salt on top (optional but soooo good!)

* I added a sprinkle of flakey sea salt before baking, and baked mine at 350F for 25min which gave them a fudgy underbaked vibe, which was sooo good
* I knew there were chickpeas in it, so I could pick out a slight aftertaste and chickpea texture when they were FRESHLY baked & still warm, AND I do LOVE chickpeas. I thought these were really yummy (I ate half my half batch fresh while filming this, lol). BUT, AFTER FULLY CHILLING the other half overnight, I have to say I would have NO IDEA there are chickpeas in here.
