Get cozy with this creamy, dreamy vegan & gluten-free rice pudding — the perfect fall comfort dessert! Made with coconut milk and naturally sweetened to taste, it’s rich, warming, and endlessly customizable.
Ingredients (Makes 2-4 servings)
½ cup short grain or arborio rice, rinsed & drained
1 can full-fat coconut milk
2–4 tbsp sweetener (maple syrup, sugar or sweetener of choice)
1 cinnamon stick or ¼ tsp ground cinnamon*
pinch of sea salt
1 tsp vanilla
Optional Toppings:
Raisins, dried cranberries, flaked coconut, cinnamon, chai spice, pumpkin pie spice, cooked apples or your favourite fall fruits
Directions:
Add rice, coconut milk, sweetener, cinnamon & salt to a medium saucepan
Bring to a gentle boil over medium heat, then reduce to low
Simmer uncovered, stirring often, until thick and creamy (about 20-25 minutes) - if it thickens before your rice is cooked, add a splash or 2 of water to keep it from burning & keep cooking
Remove from heat & stir in vanilla
Serve warm or chilled with your favourite toppings.
✨Tip: Adjust the sweetness to your liking & try it with chai or pumpkin pie spice for an extra fall twist!
Notes & Variations
Spice Options:
Classic: 1 cinnamon stick or ¼ tsp ground cinnamon
Chai Spice: 1 cinnamon stick or ¼ tsp ground cinnamon plus 1 cardamom pod and 2 cloves for a warm, aromatic twist
Rice Substitutes:For a lighter or lower-carb version, try using riced cauliflower or konjac rice. Follow the Leftover Rice method below, since these won’t absorb liquid like uncooked rice.
Leftover Rice Version 🍚
1 cup cooked rice (or rice substitute)
1 cup canned coconut milk
2 tbsp sweetener of choice
Pinch of sea salt
1 cinnamon stick or ¼ tsp ground cinnamon*
1 tsp vanilla
Directions:
Add the cooked rice (or substitute), coconut milk, sweetener, cinnamon, and salt to a saucepan.
Bring to a gentle simmer and cook until thick and creamy, about 10–15 minutes.
Remove from heat, stir in vanilla, and top as desired.
