Day 8 of Healthy Summer Treats: šŸŖšŸØ Ice cream cookie cups - eat your bowl.

We’re making some fun cookie cups to serve ice cream sundaes! You don't even need a spoon AND you can eat your bowl. šŸ˜‰šŸ™ŒšŸ»


STEPS:

ā–ŗ Shape your cookie dough onto the backside of a muffin tin to make a cup shape

ā–ŗ Bake per cookie instructions & let cool

ā–ŗ Carefully pop off your cookie cups and fill with your favourite ice cream & toppings & enjoy!!



RECIPE:

ā–ŗ Make them using your fav choc chip cookie recipe OR we used our easy one bowl gluten-free vegan chocolate chip cookie dough recipeĀ  (recipe follows ā¬‡ļø).


NOTE: If you use your own recipe, you may want to grease the muffin tin first to make sure your cookies come off easily. We’ve tried other recipes and sometimes they stick much more compared to this one.


COOKIE CUP DOUGH:

2 cups almond flour

1/4 cup maple syrup (or liquid sweetener of choice)

1/4 cup coconut oil, melted

1 tsp vanilla

1/2 tsp sea salt

1/4 tsp baking soda

1/2 cup chocolate chips (of your choice)


ā–ŗ Combine all in a bowl, adding the chocolate chips last.

ā–ŗ Portion out and shape per above for cookie cups.

ā–ŗ Bake at 350F for 8minutes (or until it starts to brown).
