Easy Raspberry Chia Jam



This super easy chia jam comes together in less time than it takes to make your crumpets!! (Or whatever you’re slathering it on!!). AND if you’re trying to up your fibre (hello fibre-maxing trend!), raspberries are one of the highest fibre berries, PLUS we’ve added fibre-packed chia seeds to thicken the jam.


I do this with organic frozen raspberries, but you could swap them for almost any fresh or frozen fruit.


Ingredients:

  • 270g (about 2 cups) frozen raspberries

  • 1/4 cup maple syrup

  • 2 tbsp chia seeds

  • 1 tsp fresh lemon juice


Instructions:

  1. Combine raspberries and maple syrup in a medium saucepan

  2. Cook over medium low heat until berries have thawed, released juices and broken down (2-3 minutes)

  3. Remove from heat and stir in chia seeds & lemon juice

  4. Let cool, then transfer to air tight container & store in fridge for up to a week
