😅😭 I Thought My Recipe Was Broken. It Wasn't



Has this ever happened to you?


I have been troubleshooting this 3-ingredient flax bread recipe for months.


After working perfectly for years, it suddenly started making a large air pocket under the top crust (known as a "flying crust") and a dense bread layer underneath. I worried it wasn't a reliable recipe anymore, so I started testing variables one by one.


I tried:

* blending the flax differently

* changing the water temperature

* adjusting the mixing method

* allowing the dough to fully hydrate before shaping

* pressing out trapped air

* slightly reducing the water content


Some of those changes helped. The crumb became more even and the giant air pockets got smaller. But the problem never completely disappeared.


Then something unexpected happened.


At the bakery, I finally opened a new bag of psyllium husk powder. I buy it in bulk, so it takes a while to work through a bag. While making sourdough, pizza dough, and sandwich bread that week, I noticed the new batch was more absorbent and produced noticeably bouncier dough.


So I made another loaf of flax bread. I changed absolutely nothing else. Same recipe. Same measurements. Same oven. And suddenly the loaf turned out beautifully.


Wonderful and frustrating all at once.


It's a good reminder that ingredient variability matters, especially in gluten-free baking. Psyllium husk, coconut flour, and other high fiber ingredients can vary significantly from batch to batch, even from the same supplier. And because this recipe relies on so few ingredients, those differences have a much bigger impact.


So if a recipe suddenly stops working, it isn't always you. And it doesn't necessarily mean the recipe is broken.


Sometimes the ingredients ay have changed without you even knowing.


Gluten-free “3-Ingredient” Flax Bread


Ingredients

240g (1½ cups) golden flaxseeds/linseeds, finely ground

* 40g (¼ cup) ground psyllium husk

* 2 tsp baking powder

* ½ tsp salt

* 1¼ cups (300mL) warm water(not hot or boiling)


Instructions

1. Preheat your oven to 350F

2. Combine the ground flaxseed, psyllium husk, baking powder, and salt in a medium bowl & whisk well

3. Add the warm water and mix until no dry spots remain

4. Let the mixture rest for 5 minutes to allow the flax and psyllium to fully hydrate and evenly distribute moisture

5. Knead briefly, then shape into a smooth oval loaf.

6. Transfer to a parchment-lined baking sheet or loaf pan

7. Optional: lightly wet the top of the loaf and sprinkle with whole flaxseeds

8. Bake for 50–60 minutes, until the loaf is firm to the touch and has developed a deep golden-brown crust.

9. Remove from the oven and transfer to a wire rack. Allow to cool completely before slicing.


Notes

* If using whole flaxseeds, grind them really well before measuring for best results

* I sliced this loaf into ten ½-inch slices, though you can slice it thinner or thicker depending on your preference.

* For best texture, allow the bread to cool completely before cutting.
