Healthy Almond Joy Muffins
I tried making Dr Steven Gundry’s Almond Joy muffins (with a few tweaks)! As a HUGE coconut lover, and fan of the Bounty bar, these were right up my alley! But stay away if you don’t LOVE coconut!! (And leave more for me, lol)
These healthy chocolate almond coconut muffins are a great meal prep/snack for school/work. They’re gluten-free, dairy-free, lectin-free, paleo, and low carb/keto friendly, and packed with coconut, almond, and chocolate.
Ingredients:
1 cup almond flour
1/2 cup coconut flour
1/2 cup desiccated/shredded coconut
1/2 cup granulated sweetener of choice (we used allulose)
1 tsp baking soda
3 eggs
1/3 cup coconut milk
1/4 cup avocado oil or melted coconut oil (we used avocado here)
1 tsp vanilla
1 tsp almond extract
1/2 cup chocolate chips of choice (we used allulose sweetened chips)
1/2 cup sliced/slivered almonds
Combine wet, add dry, then fold in almond & choc chips (we kept a few to add to the top after scooping into muffin papers to make them look prettier).
Divide into prepared muffin pan (makes 12).
Bake for 15-20 minutes, until toothpick test comes out clean.
