No Oat Crumble Fudge Bars | GF/DF/V/Low-Carb

These yummy bars are our version of a no-bake oatmeal chocolate fudge crumble bar. But ours are gluten-free, grain-free, oat-free, starch-free, dairy-free, egg-free, vegan, refined-sugar-free (and can be totally sugar-free, low-carb too!)

For 8x8 pan, makes 16 squares
(or half the recipe and make it in a loaf pan)
Crumble Ingredients:
-1 1/2 cups almond flour
-2 tbsp coconut flour
-1 cup desiccated coconut (unsweetened dried coconut)
-6 tbsp brown allulose/sweetener of choice*
-1/2 cup vegan butter/coconut oil/palm fruit shortening**, cold
-1/2 cup pecans
-1/4 tsp sea salt
Filling:
-3/4 cup chocolate of choice (I used allulose sweetened)
-1/4 nut butter of choice (I used cashew butter)
OR substitute 1 cup of your fav jam/fruit filling for a fruit bar!!
Steps:
-If your “butter” is not already cold, cut into smallish pieces and pop into the freezer
-Combine remaining topping ingredients in a food processor and pulse until mixed and nuts are broken up
-Add cold butter and pulse until crumbles form
-Press about 1/2-2/3 of the crumble into a lined 8x8 pan
-Crumble remaining onto parchment lined tray and bake pan & loose crumble for about 20 minutes at 325F (keep an eye on the crumbles as they bake faster - pull them when they are nicely golden)
-While crumble is baking, melt your filling in 30sec bursts in the microwave (or use a double boiler) and mix until smooth. Spread over baked base, then sprinkle crumble over top.
-Chill until filling sets, then cut & enjoy!!
-NO BAKE: you can do this as a no bake dessert, and just assemble, but I prefer it baked.
