Peanut Butter Ice Cream Pops 🍫🍦🥜

Making chocolate peanut butter ice cream pops is super easy, they're creamy & delicious, AND you DON'T NEED fancy popsicle molds for this recipe either.
Ingredients:
-1 can coconut milk, chilled in the fridge overnight so you can scoop off the cream
-1/2 tsp vanilla
-2 tbsp maple syrup
-1/4 cup peanut butter (we used natural PB)
Choc:
-1 cup chocolate chips/chopped choc bar
-1 tbsp coconut oil
Topping:
-chopped peanuts
How To:
-Scoop coconut cream off the top of the chilled coconut milk can and add to mixing bowl. Add PB, vanilla, and honey/syrup to the bowl
-Spoon into molds OR mounds on a parchment lined baking tray then freeze a few hours until solid
-Melt choc & coconut oil in microwave in 30s bursts until fully melted, then dip pops into choc
**TIP: we like to put the melted choc into a tall cup/glass so it's easier to dip the popsicles. Or you can drizzle it like my son did here.
-Before choc sets, sprinkle with chopped peanuts or another fun topping
-Chill until set, then enjoy!!
-Store remaining pops in sealed container in freezer.
