🍰 The BEST Flourless Chocolate Cake



Decadent, yet super easy to make, flourless chocolate cake. It’s completely flour-less (not even almond flour!! So nut-free too!) And you can make it dairy-free and/or sugar-free/low carb by using dairy-free and/or sugar-free chocolate chips along with your sweetener of choice.


Have fun with your toppings (to me nothing goes better with warm cake than a scoop of cold vanilla ice cream, but traditionally it gets topped with a dusting of powdered sugar or cocao powder, and some “clotted cream”). Then enjoy!


Ingredients:

â–ş 120g semi-sweet or dark chocolate (use dairy-free and/or sugar-free as required**; I used df/v/sf allulose choc)

â–ş 90g coconut oil

â–ş 110g sugar/sweetener** (I used monk-allulose blend)

â–ş 1 tsp vanilla

â–ş 1/2 tsp espresso powder, optional but really deepens the chocolate flavour

â–ş Pinch salt

â–ş 3 eggs

â–ş 16g cocao powder


Instructions:

► Preheat your oven to 350F and line a 6” round pan with parchment paper*

â–ş Melt your chocolate and coconut oil together in the microwave in 30 second bursts. Stir in sweetener, espresso powder (if using) vanilla, and sea salt.

► If mixture is super hot, set aside for 10 mins, to let cool (so you don’t cook the eggs when you add them)

â–ş Then add eggs & cocoa powder, and mix until combined. Switch to a whisk and whisk until smooth. Then transfer to your cake pan.

â–ş Bake 27-32min. Let cool about 10 minutes in the pan, then remove

â–ş Top as desired (powdered sugar, cocao powder, cocowhip, whipcream, clotted cream and/or ice cream), slice & enjoy!!

NOTES:

*You can double the recipe and make it in an 8” pan

**You can totally customize this by opting for dairy-free or sugar-free chocolate, plus your sweetener of choice.
