Day 7 of Healthy Summer Treats: 🍋🍨 3-Ingredient Lemon Ice Cream #summeronshorts
INGREDIENTS: - Zest & juice of 2 lemons* - 1 can full fat coconut cream - 1/2 cup sweetener of choice (I used organic honey) NOTES: *I did try the “whole lemon” way first, but I found it too bitter and did not enjoy it. So I remade it using the zest & juice, and it was SOOOOO delicious and refreshing. This will definitely be on repeat this summer. This is fairly heavy on honey but makes for a nice soft texture. You can swap the sweetener or adjust it lower too if you want it

Day 3 of Healthy Summer Treats: 🍉Watermelon Shaved Ice #SummerOnShorts
This one ingredient shave ice hack seemed so simple I almost didn’t want to include it in our healthy summer treat series BUT our watermelon’s texture was sub-par (and a bit mealy), so my kids did NOT want to eat it. And freezing it, and shaving it with a microplane, totally transformed and saved this melon. Don’t have a microplane? Or even if you do… I also tested this with my grater setting in our food processor and it worked like a charm, and was definitely a time saver to

Crispy Cauliflower Bites
I was cravings cauliflower bites after trying a box of store bought ones recently, and really, they aren’t that hard to make at home - pretty fun actually. Plus, for the same cost, you end up with SOOO MANY more. Here’s what you need: -1 head cauliflower, cut into bite sized pieces (I used half a bag of cauliflower florets from Costco and cut the really big florets into smaller bite-sized pieces) BATTER -1 cup gluten-free flour (I used 1/3c millet, 1/3c sorghum, and 1/3c cass

🧈 DIY Whipped Vegan Butter
A super quick & easy swap for butter in a recipe, you can do a straight swap for coconut oil, or Spectrum palm shortening, but in actuality real butter contains water (not just fat! It’s 80-82% fat, and 18-20% water) which can impact how your recipe bakes. Sometimes you need the water content in there to create steam and create lift (like in pastries, etc). To mimic butter, you can make this super fluffy vegan butter replacement at home in less than 5 minutes, and store it in

Oat-Free Rhubarb Crisp/Crumble
It’s that time of year!! I was gifted some fresh rhubarb last night, so that means… … rhubarb crisp!! (Or crumble, or whatever you like to call it. It’s so delicious fresh from the oven with a cold scoop of vanilla ice cream. Yum!!). Here we pair the rhubarb with some fresh strawberries and blackberries that we had in our fridge, but rhubarb pairs super well with any berry, or even apples - something sweet that plays well with the sourness of the rhubarb. Also, feel free to u

🤎❤️🤍 Layered Choc Strawberry Chia Pudding Without the Wait 🤎❤️🤍
With the warm spring weather here, I find myself leaning away from my cooked keto porridge I ate on repeat all winter and feeling more like a chia pudding. One of my favourites I’ve made today with a couple of tricks, you can get rid of that 3+ hour wait you normally need for a chia pudding to thicken and you can make it for breakfast that day. This is going to be a layered chocolate vanilla chia pudding that I’m adding some strawberries too, but you can also mix it up and d
