Mincemeat Tart Filling | Dairy-Free/Vegan

(Small Batch – perfect for 1 large tart or 10–12 mini tarts)
Sounds kinda weird for a dessert, but it’s really just a fruity filling, packed with a variety of dried fruits like raisins, berries, soaked in a sweet spiked juice. It sits to let the flavours meld, then gets used as a tart filling.
Ingredients
1 Granny Smith apple, peeled & finely diced or grated
200g mixed dried fruit, for example:
50g raisins
50g sultanas/golden raisins
30g dried blueberries
40g currants
30g dried apricots, finely chopped
30g mixed peel
15g candied ginger, finely chopped
1 orange – zest + juice
50g coconut sugar/sweetener of choice (I used allulose)
Spices:
½ tsp cinnamon
½ tsp mixed spice, pumpkin spice or combo of allspice/nutmeg/clove
40g finely diced/grated frozen red palm fruit shortening/coconut oil
3 Tbsp Grand Marnier (or extra orange juice for alcohol-free)
Method
Combine apple + dried fruit + peel + ginger in a bowl.
Add zest, juice, sugar & spices.
Grate in the frozen red palm shortening for a buttery crumble effect.
Stir in Grand Marnier or extra orange juice
Let rest at least 24 hours in the fridge
