Healthy Butterfinger Bars

Homemade gluten-free, vegan, better-for-you butterfingers, with a crunchy peanut butter cornflake filling. The trick is cooking the syrup mixture to create the classic chewy-candy-ness texture in the filling. Coated in a dark chocolate. Try to eat just one!!
Filling
¾ cup natural peanut butter or almond butter
⅓ cup maple syrup
1 tbsp coconut sugar
1 tsp vanilla
¼ tsp salt
2¼ cups gluten-free cornflakes, lightly crushed (half flakes, half crumbs)
Coating
1 cup dairy-free chocolate chips
2 tsp coconut oil
Instructions
Line an 8×4-inch loaf pan with parchment paper
Add peanut butter, maple syrup, coconut sugar, and salt to a small saucepan
Bring to a gentle simmer over medium-low heat and cook for 1–2 minutes, stirring constantly
Remove from heat & stir in crushed cornflakes & vanilla, until evenly coated
Press firmly into the prepared pan
Freeze for 30-60 minutes until firm
Melt the chocolate & coconut oil until smooth
Either spread the chocolate over the slab and cut into bars once set, or cut the slab into bars first and dip each one in chocolate.
Chill until the chocolate hardens
