no oat APPLE CRISP grain-free low-carb vegan

Inspired by my low-carb no-oat oatmeal/porridge recipe that I am still obsessed with & eating on repeat (https://youtu.be/_BohEHI10is?si=5kO6JYKyvIcUsYGW), we’re making a crunchy protein-packed (over 12g of protein for 1/4 recipe) ZERO-net-carb crisp topping with a mix of nuts & seeds, and healthy fats. Go traditional with chopped apple tossed in warm spices, or make it EVEN lower carb by swapping some or all of the apple for berries.
►12g protein in the topping, per quarter batch
►0g net carb topping if you use allulose
►Want a lower carb version, swap the apple (22g net carbs per apple) for berries: blackberries are lowest (6g net carbs per cup), followed by raspberries (7g net per cup), strawberries (9g net per cup), then blueberries (17.4g net per cup)
TOPPING:
1/2 cup pecans, rough chopped
1/4 cup unflavoured protein powder (or swap for more almond flour)
1/4 cup almond flour
1/4 cup allulose or granulated sweetener of choice
2 tbsp hemp seeds
2 tbsp ground flaxseed
2 tbsp desiccated coconut
2 tbsp chia seeds
1/4 cup coconut oil, melted
1/4 tsp sea salt
FILLING:
4 apples, peeled & chopped
1 tsp apple pie spice/chai spice or just cinnamon
1 tsp allulose or granulated sweetener of choice
►Combine topping ingredients in a medium bowl and mix until coconut oil is evenly distributed
►Peel & chop apples and toss with spice of choice & sweetener of choice, and put in 8x8 oven-safe baking dish
►Spread topping over filling, and bake at 325F for 30minutes.
►Enjoy!!!
NOTES: if you like your apples fully cooked & soft, use my mom‘s trick and microwave the filling for a few minutes before adding the topping and popping it in the oven.
