Peanut Butter Cookie Dough Cups 🍪🥜🍫

We tried Billie Eilish’s ooey gooey PB cookie recipe this week, and they were super delicious, but we had leftover cookie dough (we only baked half the recipe) so my daughter suggested we make Reese peanut butter cups but with the cookie dough ➡️ cookie cups.
Super easy no bake recipe, kid friendly, and ended up tasting very much like Reese PB cups (but with the extra choc chips from the cookie dough, and who ever said no to extra choc chips?!?).
What you need:
1) some cookie dough (leftover from a recent recipe you made, or store bought, or try Billie Eilish’s GF/V PB cookie recipe (that’s what we used here) or our GF/V cookie recipe

2) About 1c of chocolate (chips, or chopped choc bar) to melt for dipping
3) 1 tbsp coconut oil to stir into the melted choc, to help with dipping
4) Cupcake papers & a muffin tin
How to:
1. Line your muffin tin with cupcake papers
2. Fill papers with 1-2tbsp of melted choc, then press flattened balls of cookie dough into the choc, until the choc comes up the sides of the cookie dough.
3. Top with 1-2 more spoon of choc to fully seal the cookie dough
4. Pop into fridge or freezer until set
5. Carefully peel off the cupcake papers and enjoy!
6. Store any extras in an airtight container in the fridge

Ingredients:
1 cup brown sugar (we switched it to coconut sugar)
1 cup peanut butter
2 tsp vanilla extract
1 cup oat flour (blend 1c oats in blender/nutribullet)
1 tsp baking soda
1/8 tsp salt
1/4 cup almond milk
chocolate chips
chocolate squares or extra choc chips to top hot cookies
How To:
1. Preheat your oven to 350F
2. Mix the sugar & PB together until smooth then add vanilla
3. Add oat flour, baking soda, salt & mix until combined
4. Add milk and chocolate chips (STOP HERE AND USE FOR COOKIE CUPS OR FOLLOW STEPS BELOW AND BAKE THEM OFF). 🙃
5. Divide onto parchment lined baking tray and press them down with a fork to create the classic PB cookie look
6. Bake for 10-12 min. Top each cookies with a square of choc while hot.
7. Let cool a few minutes before serving, then as she says “Boom! All done!” enjoy!!
