Day 8 of Healthy Summer Treats: 🍪🍨 Ice cream cookie cups - eat your bowl.
We’re making some fun cookie cups to serve ice cream sundaes! You don't even need a spoon AND you can eat your bowl. 😉🙌🏻 STEPS: ► Shape your cookie dough onto the backside of a muffin tin to make a cup shape ► Bake per cookie instructions & let cool ► Carefully pop off your cookie cups and fill with your favourite ice cream & toppings & enjoy!! Day 7 of Healthy Summer Treats: 🍋🍨 3-Ingredient Lemon Ice Cream #summeronshorts
INGREDIENTS: - Zest & juice of 2 lemons* - 1 can full fat coconut cream - 1/2 cup sweetener of choice (I used organic honey) NOTES: *I did try the “whole lemon” way first, but I found it too bitter and did not enjoy it. This one ingredient shave ice hack seemed so simple I almost didn’t want to include it in our healthy summer treat series BUT our watermelon’s texture was sub-par (and a bit mealy), so my kids did NOT want to eat it. Day 1 of Healthy Summer Treats: 💛🩵Tropical Smoothie Popsicles #summeronshorts
Let’s make healthy 4 ingredient tropical smoothie popsicles as we kick off a new series of healthy summer treats. -2 cups frozen pineapple -1 cup coconut milk -1/2 cup frozen mango or 1/2 banana -1/2 tsp blue spirulina for swirled (or 1 tsp for fully blue popsicles) Combine frozen fruits and coconut milk and blend until smooth, then add spirulina to half to turn it tropical blue. 🧈 DIY Whipped Vegan Butter
A super quick & easy swap for butter in a recipe, you can do a straight swap for coconut oil, or Spectrum palm shortening, but in actuality real butter contains water (not just fat! It’s 80-82% fat, and 18-20% water) which can impact how your recipe bakes. Sometimes you need the water content in there to create steam and create lift (like in pastries, etc). It’s that time of year!! I was gifted some fresh rhubarb last night, so that means… … rhubarb crisp!! (Or crumble, or whatever you like to call it.
