Cookie Monster Protein Ice Cream

🩵🍪🍦(with or without a Ninja Creami!)
A dairy-free, plant-based version the viral Cookie Monster Protein Ice Cream with home made protein cookie dough balls for added protein. No cottage cheese here!!
Feel free to swap the cookie dough for store-bought chocolate chip cookies for an even easier (but lower protein) version.
Blue Vanilla Protein Ice Cream
🩵🍦Ingredients
1 cup canned full fat coconut milk
1/2 cup almond milk
1/4 cup maple syrup
1 scoop vegan protein powder (*see note below)
1 tsp vanilla
1 tsp blue matcha powder or 1/2 tsp blue spirulina
Protein Cookie Dough Balls (makes 26 tsp sized balls)
🍪 Ingredients
1/4 cup unflavoured protein powder
1/4 cup almond butter
2 tbsp maple syrup
2 tbsp mini dairy-free/dark chocolate chips (I used Enjoy Life minis)
Pinch of sea salt
Instructions:
Cookie dough balls - combine, roll into little balls, then freeze
Ice cream - combine & mix: you could use a blender, an immersion blender, a milk frother, or even the Creami on milkshake mode to mix it all together.
Pour into Creami tub(s) & freeze overnight (OR pour into ice cube trays)
"Spin" on Lite Ice Cream Mode (OR put your frozen cubes into a food processor & blend until smooth & creamy)
Dig a hole down the middle & add in half of your protein cookie dough balls (by hand for larger chunks or without a ninja creami), or use mix-in mode for smaller, more dispersed chunks
Top with remaining cookie dough balls & enjoy!
NOTE:
*I used 1 scoop of Now Foods Unflavoured Organic Pea Protein Powder giving us +24g of protein - you can do up to 2 scoops but it will get MUCH thicker, more like mousse/pudding - still delicious, but less ice cream-like
